Pomfret chutney
1 Pomfret
½ tsp turmeric powder
1 tsp salt
One inch tamarind
One onion finely chopped
1 tbsp oil
For Masala (Grind everything)
1 cup grated coconut
1 tbsp coriander powder
7-8 garlic cloves
1 tsp black pepper,
One onion finely chopped
4-5 red chili pepper (soaked in water)
Method:
Grind all the masala mixture.
saute the onion in a pan
Add all ingredients except pomfret and add the ground masala.
Saute the mixture for another 5 minutes
Add a cup of water and add pomfret
Cook until it is ready.
Prawns curry
1 cup cleaned prawns
Salt as per taste
½ tsp turmeric powder
One onion finely chopped
1-inch tamarind
1 tbsp oil
For Masala:
1 cup grated coconut,
1 tsp coriander
1 tbsp onion
3-4 green chilies finely chopped
7-8 garlic cloves
Grind all masala ingredients
Saute oil in a pan and add all mixture expect prawns
Saute the mixture for 10 minutes and add a cup of water
Add prawns and garnish with coriander leaves.
Mackerel fry
1 Mackerel
2 tbsp wheat flour
2 tbsp rice flour
1 tbsp garam masala
Salt
1 tsp red chili powder
1 tsp coriander powder
Method:
Marinate mixture with mackerel and keep it for an hour
Heat oil a pan and saute mackerel for six minutes.
Indian Salamon fry
One medium salmon
1 tsp red chili powder
½ tsp turmeric powder
3-4 kokum pieces
1 tbsp oil
Masala
One onion finely chopped
1 tbsp grated dry coconut
1 tbsp ginger
5-6 garlic cloves
1 tsp black pepper powder
A handful of coriander leaves
Method:
Grind all masala and heat oil in a wok
Saute all mixture except fish for 7 minutes in the oil.
Add fish pieces and saute for 4 minutes until fish is ready.
Portuguese stuff fish
One big Pomfret
¼ cup of rice flour
For Masala marination
One onion finely chopped
2 tbsp ginger garlic paste
1 tsp cumin powder
1 tsp red chili powder
Method:
Apply masala marination on the Pomfret and marinate for 20 minutes
Heat oil in a wok
Dip the fish pieces on rice flour and place the fish in oil
Do this for all fish pieces until fish is ready.
Tandoori Pomfret barbeque
One big Pomfret
2 tbsp garlic paste
2 tbsp ginger paste
1 tsp cumin powder
1 tsp salt
One sp curd
1 tsp garam masala powder
1 tsp barbeque sauce
2 tsp red chili powder
1 tsp lemon juice
Method:
Clean the pomfret and slice it as per required size
Grind all ingredients and apply them to Pomfret.
Heat oil in a pan and shallow fry the marinate Pomfret along with remaining masala.
Bombay duck camping barbeque
4-5 big Bombay duck or bombil
1 tbsp garlic paste
1 tbsp ginger paste
1/2 tsp cumin powder
1 tsp salt
1/2 tsp curd
1/2 tsp garam masala powder
1 tsp lemon juice
Method:
Clean the Bombay duck and place it inside a cloth to make sure fish lose little water. If we don’t follow this process, then fish will scramble while cooking. Therefore it is necessary to dry the fish for some time.
Clean the pomfret and slice it as per required size
Mix all ingredients and marinate them to Bombay duck.
Heat oil in a pan and shallow fry the marinate Pomfret along with remaining masala.
