BUFFALO CHICKEN PASTA

Recipe Name: BUFFALO CHICKEN PASTA

Ingredients:
1 lb Mostaccioli, Penne or other medium pasta shape, uncooked
1 tsp paprika
½ tsp salt
½ tsp garlic powder
½ tsp black pepper
1 lb boneless, skinless chicken breasts, cut into ½-inch pieces
2 tsp vegetable oil, divided
1-2 tsp hot sauce
2 cup celery, sliced
½ cup red onion, chopped
1 cup low-fat mayonnaise
½ cup low-fat blue cheese salad dressing
3/4 cup skim milk
2 tbsps blue cheese, crumbled

Method:

1. Prepare pasta according to package directions.
2. While pasta is cooking, combine paprika, salt, garlic powder and pepper; sprinkle over chicken,
stirring over chicken.
3. Add 1 tsp oil to a large skillet and heat over medium-high heat.
4. Add chicken to skillet and saute over medium-high heat, stirring frequently, until chicken is
golden brown and cooked through, about 4 minutes.
5. Add hot sauce; cook 1 minute.
6. Remove chicken from skillet. Add remaining tsp of oil to skillet; add celery and onion and saute
for 2 minutes.
7. Combine mayonnaise. Dressing and milk in a small bowl.
8. Add to vegetables in skillet. Ad chicken.
9. Stir constantly and cook over medium-low heat until thoroughly heated.
10. When pasta is done, drain and return to pot.
11. Add contents of skillet to pot and mix well.
12. Transfer to serving dish and sprinkle with cheese.
13. Serve immediately.
